Green Goddess Bowl
½ bunch of cilantro
1 carrot
1 avocado
1 med cucumber
Green onion
Soba noodles
Nettle Gomasio
Sauce
1/2 cup tahini
3/4 cup water
2 Tbs Tamari
1 Tbs Spruce Tip Vinegar (or plain apple cider vinegar)
1 Tbs maple syrup
2 Tbs olive oil
1 Tbs lemon juice
Combine all sauce ingredients in a small bowl and mix well until creamy. Set aside.
Cook the soba noodles according to the instructions on the package.
In the meantime, chop the cilantro, avocado, cucumber and green onions. Peel the carrot into long thin strips with peeler.
When the soba noodles are cooked, fill the bowls. Start with a good amount of noodle, then add sauce. Top noodles with the chopped avocado, cucumber, green onions, peeled carrots and cilantro. Finally, top the dish with a good dose of Nettle Gomasio. Enjoy warm or cold!
